Lots of different kinds of cheese will work well in this easy recipe. Muenster or Gruyere would be fabulous.

Ingredients:
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 1 red bell pepper, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 12 oz. can white chunk tuna, drained
- 1 cup cottage cheese
- 1/3 cup mayonnaise
- 1 Tbsp. lemon juice
- 1 tsp. dried thyme leaves
- 1/8 tsp. pepper
- 5 English muffins, split in half and toasted
- 1-1/2 cups shredded Colby cheese
- 1/4 cup grated Parmesan cheese
Preparation:
Heat olive oil and butter in large saucepan over medium heat and saute red bell pepper, onion, and garlic until tender, about 4-5 minutes. Add tuna along with remaining ingredients except for English muffins, Colby, and Parmesan cheeses. Cook and stir for 3 minutes, until mixture is hot.
Place toasted English muffins, split side up, in 13x9" glass baking dish. Spread tuna mixture over the muffins and top with Colby and Parmesan cheeses. Broil 4-6" from heat source for 3-6 minutes, until cheese melts and bubbles.
