Creamy Tuna Melts

Lots of different kinds of cheese will work well in this easy recipe. Muenster or Gruyere would be fabulous.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 Tbsp. olive oil
  • 2 stalks celery, diced
  • 1 onion, chopped
  • 12 oz. can white chunk tuna, drained
  • 1 cup cottage cheese
  • 1/2 cup mayonnaise
  • 1 Tbsp. lemon juice
  • 1/4 tsp. garlic powder
  • 1/2 tsp. dried thyme leaves
  • 1/8 tsp. pepper
  • 4 English muffins, split in half and toasted
  • 1 cup shredded Colby cheese
  • 1/4 cup grated Parmesan cheese

Preparation:

Heat olive oil in large saucepan over medium heat and saute celery and onion until tender. Add tuna along with remaining ingredients except for English muffins, Colby, and Parmesan cheeses. Cook and stir for 3 minutes, until mixture is hot.

Place toasted English muffins, split side up, in 13x9" glass baking dish. Spread tuna mixture over the muffins and top with Colby and Parmesan cheese. Broil 4-6" from heat source for 3-6 minutes, until cheese melts and bubbles. Serves 8
