Oh yum, the velvety melted Brie complements the tart and sassy cranberry sauce in this simple yet elegant sandwich. You could use blueberry chutney, or apricot preserves in place of the cranberry sauce if you'd like.

Ingredients:
- 8 ounces Brie cheese, diced
- 1/2 cup whole berry cranberry sauce
- 8 slices sourdough bread
- 1/4 cup butter, softened
Preparation:
To easily dice the Brie, place it in the freezer for 10-15 minutes until firm, then dice. Combine in medium bowl with cranberry sauce; toss gently.
Make sandwiches with the Brie mixture and the bread. Spread butter on outsides of sandwiches, then cook on a griddle or panini maker until the bread is toasted and golden brown and the cheese melts. Serve immediately. Serves 4
