Pesto Chicken Burgers are super easy with store bought pesto, but you can make your own pesto if you'd like.

Yield: Serves 6
Ingredients:
- 2 (3.5-ounce) bottles basil pesto
- 1/2 cup soft fresh bread crumbs
- 1 minced garlic clove
- 1 egg
- 1-1/2 pounds ground chicken, dark and white meat
- 6 onion buns, split and toasted
- 3 tablespoons butter
- 2 tomatoes, thickly sliced
- 12 slices Brie cheese
Preparation:
In large bowl, combine one bottle pesto, bread crumbs, garlic, and egg; mix well. Add ground chicken; work in gently with your hands. Form into 6 patties. Chill in refrigerator 3-4 hours.
Grill patties or cook in skillet over medium heat, turning once, until internal temperature reaches 165 degrees F, about 10-15 minutes. Top with Brie slices.
Spread some of the pesto on bottom half of split and buttered buns. Add tomato, chicken burgers, more pesto, and top of buns. Serve immediately.
