Ingredients:
- 2 lbs. skinless, boneless turkey thighs
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 onion, chopped
- 1 cup chopped mushrooms
- 1 green bell pepper, chopped
- 6-oz. can tomato paste
- 1/3 cup sliced ripe olives
- 1 tsp. dried oregano leaves
- 2 Tbsp. cornstarch
- 2 Tbsp. water
- 1 cup cubed Brie cheese
- 6-8 whole wheat pita breads, split
Preparation:
In 4-6 quart crockpot, place turkey. Sprinkle with salt and pepper. Top with onions, mushrooms, green bell pepper, tomato paste, olives, and oregano and mix well. Cover and cook on low for 6-8 hours until turkey is thoroughly cooked.Remove turkey from crockpot and shred meat into thin strips using forks. Return to crockpot. In small bowl, combine cornstarch and water and mix well; stir into mixture in crockpot. Cover and cook on high for 20-30 minutes until thickened, stirring once during cooking. Make sandwiches using filling, Brie cheese, and split pita breads. 12 sandwiches
