Provencal Turkey Crockpot Sandwiches

You can also serve this hearty sandwich filling recipe in some toasted kaiser rolls, or rolled into flavored flour tortillas as a neat to eat wrap.

Prep Time: 20 minutes

Cook Time: 8 hours,

Ingredients:

  • 2 lbs. skinless, boneless turkey thighs
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 onion, chopped
  • 1 cup chopped mushrooms
  • 1 green bell pepper, chopped
  • 6-oz. can tomato paste
  • 1/3 cup sliced ripe olives
  • 1 tsp. dried oregano leaves
  • 2 Tbsp. cornstarch
  • 2 Tbsp. water
  • 1 cup cubed Brie cheese
  • 6-8 whole wheat pita breads, split

Preparation:

In 4-6 quart crockpot, place turkey. Sprinkle with salt and pepper. Top with onions, mushrooms, green bell pepper, tomato paste, olives, and oregano and mix well. Cover and cook on low for 6-8 hours until turkey is thoroughly cooked.

Remove turkey from crockpot and shred meat into thin strips using forks. Return to crockpot. In small bowl, combine cornstarch and water and mix well; stir into mixture in crockpot. Cover and cook on high for 20-30 minutes until thickened, stirring once during cooking. Make sandwiches using filling, Brie cheese, and split pita breads. 12 sandwiches
