Veggie Burgers

These delicious hot sandwiches have a very meaty taste, even though there's no meat in them!

Prep Time: 25 minutes

Cook Time: 10 minutes

Total Time: 35 minutes

Ingredients:

  • 15 oz. can kidney beans, rinsed and drained
  • 3/4 cup rolled oats
  • 1/2 cup finely chopped fresh mushrooms
  • 1 finely chopped onion
  • 1 carrot, finely shredded
  • 1/2 cup finely chopped red bell pepper
  • 3 garlic cloves, minced
  • 5 Tbsp. chili sauce
  • 1/2 tsp. salt
  • 1/8 tsp. white pepper

Preparation:

Combine all ingredients in a food processor or blender. Pulse or blend until coarsely chopped. Do NOT puree. Chill mixture, then shape into 4 1/2" thick patties. Wrap and freeze.

To cook, thaw patties in microwave or overnight in the refrigerator, then broil 4-6" from heat for 10-12 minutes or until patties are thoroughly cooked. You can also brown the patties in a bit of olive oil in a nonstick skillet for 5-7 minutes on each side. Serve on hamburger buns with lettuce, tomato, ketchup and mustard. 4 burgers

Just by looking at the ingredients I hesitated making these but glad I went through with the planning. I cooked mine in the skillet with little olive oil just like I do when I buy those more expensive commercial veggie burgers...while cooking the veggie burgers they smelled just like the name brand veggie burger and they tasted great as well. I did not need to add any condiments to mine. This made four patties. I especially love the fact that I saved money and not eating bad perservatives and other additives. They freeze well.
