Bacon, Mac and Cheese Soup

For best results, you really should use the shells and white Cheddar macaroni and cheese mix, but you can use plain old Kraft Mac and Cheese if you'd like.

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:

  • 4 slices bacon
  • 1 onion, chopped
  • 1 (6-ounce) package shells and white Cheddar macaroni and cheese mix
  • 3 cups milk
  • 1 cup frozen baby peas
  • 1/2 cup grated Parmesan cheese

Preparation:

In large pot, cook bacon until crisp; drain on paper towels. Drain all but 1 tablespoon bacon drippings from the pot. Cook and stir onion in drippings until crisp-tender, about 4 to 5 minutes.

Add macaroni, cheese sauce mix, and milk to the pot and bring to a boil. Reduce heat and simmer for 8 minutes, stirring frequently. Then add peas and Parmesan cheese; cook, stirring, until peas are hot and cheese is melted, about 4 minutes. Top with bacon and serve. Serves 4
