Beef Barley Vegetable Soup

Barley in soups adds a wonderful nutty, rich flavor. This simple crockpot recipe is ready to start cooking in minutes.

Prep Time: 20 minutes

Cook Time: 9 hours

Ingredients:

  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 1-1/2 lbs. beef stew meat
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2/3 cup uncooked pearl barley
  • 1-1/2 cups water
  • 1/2 tsp. salt
  • 1/2 tsp. dried thyme leaves
  • 1/4 tsp. pepper
  • 2 (14 oa.) cans ready to serve beef broth
  • 2 (14 oz.) cans diced tomatoes, with roasted garlic, undrained
  • 8 oz. can tomato sauce

Preparation:

Mix all ingredients in a 3-5 quart crockpot. Cover and cook on low heat for 8-9 hours, or high setting for 4-5 hours, until vegetables, stew meat, and barley are tender, stirring once during cooking time. Serves 8
