Ingredients:
- 1 cup frozen green beans
- 1 cup frozen corn
- 1-1/2 lbs. beef stew meat
- 1 green bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2/3 cup uncooked pearl barley
- 1-1/2 cups water
- 1/2 tsp. salt
- 1/2 tsp. dried thyme leaves
- 1/4 tsp. pepper
- 2 (14 oa.) cans ready to serve beef broth
- 2 (14 oz.) cans diced tomatoes, with roasted garlic, undrained
- 8 oz. can tomato sauce
Preparation:
Mix all ingredients in a 3-5 quart crockpot. Cover and cook on low heat for 8-9 hours, or high setting for 4-5 hours, until vegetables, stew meat, and barley are tender, stirring once during cooking time. Serves 8
