Beef and Barley Crockpot Stew

This hearty stew takes just minutes to put together, then it cooks all day for unbelievably rich and complex flavor.

Prep Time: 20 minutes

Cook Time: 10 hours

Ingredients:

  • 1 lb. boneless beef round steak
  • 2 cups frozen green beans
  • 1 cup sliced carrots
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup uncooked pearl barley
  • 4 oz. jar sliced mushrooms, drained
  • 12 oz. jar mushroom gravy
  • 3 cups water
  • 1/2 tsp. dried thyme leaves
  • 1/4 tsp. pepper

Preparation:

Trim steak and cut into 1" cubes. Combine all ingredients in 3-4 quart crockpot, mix well. Cover and cook on low for 10-12 hours. 6 servings
