Boursin Soup

You could substitute frozen chopped green beans or baby peas for the carrot in this easy five ingredient recipe. Just add along with the milk and cheese instead of sauteeing with the onion.

Prep Time: 3 minutes

Cook Time: 7 minutes

Ingredients:

  • 14 oz. can ready to serve chicken broth
  • 1 cup purchased shredded carrot
  • 1/4 cup finely chopped onion
  • 2 cups milk
  • 5 oz. pkg. Boursin cheese

Preparation:

Combine broth, carrot and onion in heavy saucepan. Bring to a boil and cook for 5 minutes until vegetables are tender. Stir in milk and cheese, and cook over medium low heat just until cheese is melted, about 2 minutes longer, stirring constantly. Don't let the soup boil. Serve immediately. Serves 4
