Crockpot Chicken Chowder Recipe
Make this delicious creamy low fat chicken chowder for dinner tonight.

Prep Time: 25 minutes

Cook Time: 6 hours

Total Time: 6 hours, 25 minutes

Ingredients:

  • 1/2 cup chopped carrots
  • 1 cup skim milk
  • 1 cup low sodium chicken broth
  • 1/8 tsp. white pepper
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 potato, peeled and cubed
  • 1/2 lb. boneless, skinless chicken breasts, cut into 1" pieces
  • 2 (15 oz.) cans creamed corn
  • 1/4 cup dried potato flakes
  • 1/2 cup grated Parmesan cheese

Preparation:

Combine all ingredients except dried potato flakes and cheese in slow cooker. Cover and cook on low for 5-6 hours or until potatoes are tender and chicken thoroughly cooked. Add potato flakes and stir well to combine. Cook mixture on high, uncovered, for 5-10 minutes or until chowder has thickened and dried potato flakes have dissolved. Top each serving with cheese. Serves 4

Good recipe but needed a little zip, Guest Genevieve

This is a nice easy recipe and I was happy to find one that doesn't rely on creamed soups. However I did find it to be a bit bland. I added a chicken bouillon cube, more salt and pepper, some marjoram and basil. I'd make it again with these additions.
