Apple juice and curry powder are nice additions to this super easy beef stew recipe that is elegant enough for company.

Ingredients:
- 1 onion, chopped
- 2 cups baby carrots
- 12 small new potatoes, cut in half
- 2 lbs. boneless beef chuck steak
- 14 oz. can diced tomatoes, undrained
- 1/2 cup apple juice
- 10 oz. can condensed beef broth
- 3 cups water
- 1 tsp. salt
- 1/8 tsp. pepper
- 4 tsp. curry powder
- 1 teaspoon ground ginger
- 3 tablespoons cornstarch
- 1/3 cup water
Preparation:
Trim excess fat off chuck steak and cut into 1-1/2" pieces. Place vegetables in bottom of 3-4 quart crockpot and top with remaining ingredients except cornstarch and 1/3 cup water. Cover crockpot and cook on low for 8-10 hours, stirring once during cooking, until beef and vegetables are tender.
In small bowl,combine cornstarch and water and mix well. stir into crockpot; cover and cook on high for 20-30 minutes or until stew is thickened. 6 servings
