This delicious recipe combines chili, true comfort food, with wild rice, a gourmet item. The combination of textures and flavors is just wonderful. I like the 'No Name' brand of frozen precooked wild rice meatballs, but you can use ordinary frozen meatballs, or make your own!

Prep Time: 15 minutes

Cook Time: 8 hours,

Ingredients:

  • 2/3 cup wild rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 14 oz. can diced tomatoes with onions and garlic, undrained
  • 15 oz. can kidney beans, rinsed and drained
  • 8 oz. can tomato sauce
  • 6 oz. can tomato paste
  • 1 cup beef broth
  • 1-1/4 cups water
  • 1/8 tsp. pepper
  • 1 Tbsp. chili powder
  • 1/2 tsp. cumin
  • 1/2 tsp. dried oregano leaves
  • 1 lb. pkg. frozen precooked wild rice meatballs

Preparation:

Place wild rice, onions, and garlic in bottom of 4-5 quart crockpot. Top with diced tomatoes and kidney beans.

In large bowl, combine tomato sauce, tomato paste, beef broth, water, and seasonings. Mix well to dissolve tomato paste. Pour into crockpot and top with meatballs.

Cover crockpot and cook on high for 1 hour. Then stir gently, cover, and cook on low for 7-8 hours until wild rice is tender and mixture is bubbling. Serve with sour cream and grated cheese. Serves 6-8
