Wild Rice Meatball Chili

This delicious recipe combines chili, true comfort food, with wild rice, a gourmet item. The combination of textures and flavors is just wonderful. I like the 'No Name' brand of frozen precooked wild rice meatballs, but you can use ordinary frozen meatballs, or make your own!

Prep Time: 15 minutes

Cook Time: 8 hours

Ingredients:

  • 1 cup wild rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 14 oz. can diced tomatoes with onions and garlic, undrained
  • 15 oz. can black beans, rinsed and drained
  • 8 oz. can tomato sauce
  • 1 cup beef broth
  • 4 cups water
  • 1/8 tsp. pepper
  • 1 Tbsp. chili powder
  • 1/2 tsp. cumin
  • 1 lb. pkg. frozen precooked wild rice meatballs

Preparation:

Place wild rice, onions, and garlic in bottom of 4-5 quart crockpot. Top with diced tomatoes and beans.

In large bowl, combine tomato sauce, beef broth, water, and seasonings. Pour into crockpot and top with meatballs.

Cover crockpot and cook on high for 1 hour. Then stir gently, cover, and cook on low for 7-8 hours until wild rice is tender and mixture is bubbling. Serve with sour cream and grated cheese. Serves 6-8
