Crockpot Wild Rice Chowder

This excellent recipe cooks for hours in your crockpot so dinner is ready when you are.

Prep Time: 20 minutes

Cook Time: 8 hours,

Ingredients:

  • 1/2 cup wild rice, rinsed
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup water
  • 1 boneless, skinless chicken breast, cubed
  • 2 cubed potatoes, unpeeled
  • 1-1/2 cups baby carrots
  • 1/2 tsp. dried thyme leaves
  • 1/8 tsp. nutmeg
  • 1/8 tsp. pepper
  • 1 cup frozen corn
  • 1 cup half and half
  • 2 Tbsp. cornstarch

Preparation:

Combine all ingredients except for half and half and cornstarch in 4-5 quart crockpot. Cover and cook on LOW for 8-9 hours until chicken is cooked and wild rice and vegetables are tender.

In small bowl, combine half and half and cornstarch and mix with whisk to blend. Stir into crockpot and mix gently but thoroughly. Cover and cook on HIGH for 15-20 minutes until thickened. Serves 6
