Apple juice and curry powder are nice additions to this super easy beef stew recipe that is elegant enough for company.

Ingredients:
- 2 lbs. boneless beef chuck steak
- 2 onions, chopped
- 3 cloves garlic, sliced
- 2 cups baby carrots
- 12 small new potatoes, cut in half
- 4 oz. can diced tomatoes, undrained
- 1 minced jalapeno pepper, if desired
- 1/2 cup apple juice
- 3 cups boxed beef stock
- 2 cups water
- 1 tablespoon curry powder
- 1 teaspoon salt
- 1/4 tsp. pepper
- 1 teaspoon ground ginger
- 3 tablespoons cornstarch
- 2 teaspoons curry powder
- 1/3 cup water
Preparation:

Trim excess fat off chuck steak and cut into 1-1/2" pieces. Place vegetables in bottom of 4-5 quart crockpot and top with remaining ingredients except cornstarch, 2 teaspoons curry powder, and 1/3 cup water. Cover crockpot and cook on low for 7-9 hours, stirring once during cooking, until beef and vegetables are tender.
In small bowl,combine cornstarch, 2 teaspoons curry powder, and water and mix well. stir into crockpot; cover and cook on high for 20-30 minutes or until stew is thickened. 6 servings
