Crockpot Double Corn Chowder

Two kinds of corn add to the richness and wonderful texture of this super easy slow cooker stew recipe.

Prep Time: 10 minutes

Cook Time: 6 hours,

Ingredients:

  • 3 cups frozen corn
  • 14 oz. can creamed corn
  • 1 onion, chopped
  • 2 (14 oz.) cans ready to serve chicken broth
  • 1/8 tsp. pepper
  • 1/2 tsp. dried thyme leaves
  • 2 Tbsp. cornstarch
  • 3 Tbsp. water

Preparation:

Combine all ingredients except cornstarch and water in 3-4 quart crockpot and stir gently to mix. Cover and cook on low for 5-6 hours or until corn is tender. In small bowl, combine cornstarch and water and mix well; stir into crockpot. Cover and cook on high for 10-15 minutes until thickened. Top with popcorn or oyster crackers and serve. 4 servings
