Grandma's Chicken Soup

This rich and delicious old fashioned hot soup recipe is so simple to make cooked in your crockpot.

INGREDIENTS:

  • 1 lb. boneless, skinless chicken thighs
  • 1 Tbsp. olive oil
  • 1 Tbsp. butter
  • 2 stalks celery, with leaves, sliced
  • 2 large carrots, sliced
  • 1 onion, chopped
  • 14 oz. can diced tomatoes, undrained
  • 14 oz. can ready to serve chicken broth
  • 1 tsp. dried thyme leaves
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 9 oz. pkg. frozen green peas
  • 1 cup refrigerated egg noodles pasta

PREPARATION:

Heat olive oil in a skillet over medium heat. Add chicken and cook, stirring frequently, for 5 minutes. Place chicken and remaining ingredients except peas and noodles in a 3-4 quart slow cooker and stir to mix.

Cover crockpot and cook on low for 6-1/2 to 7 hours, or until chicken is thoroughly cooked and no longer pink in center. Stir in peas and noodles and cook 10 minutes longer until noodles are tender and soup is thoroughly heated. Serves 8
