Improved Chicken Broth

The next time you use canned broth in a recipe that really requires homemade (like Tortellini in Brodo), take a few extra minutes to jazz up the canned stuff with some fresh ingredients. You could do this with beef broth too.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 3 (14-ounce) cans ready to serve chicken or beef broth
  • 1/2 cup water
  • 3 stalks celery, chopped
  • 1/4 cup chopped celery leaves
  • 1 onion, chopped
  • 2 whole cloves garlic
  • 1 carrot, chopped
  • Any chicken or beef trimmings

Preparation:

Combine all ingredients in a heavy saucepan. Simmer for 15-20 minutes, then strain the broth, discarding solids. Refrigerate the stock for up to 3 days, or freeze in ice-cube trays for longer storage.
