This hearty chowder really is lower in calories and fat, but the taste is wonderful.

Ingredients:
- 2 Tbsp. olive oil
- 2 cups chopped cabbage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chopped celery
- 1 cup thinly sliced carrots
- 15 oz. can creamed sweet corn
- 2-1/2 cups skim milk
- 1/4 tsp. pepper
- 1/2 tsp. dried thyme leaves
- 2 cups cubed light pasteurized process American cheese
- 9 oz. pkg. frozen peas
Preparation:
Heat olive oil in large saucepan. Add cabbage, onions, celery and carrots. Cook 10 minutes, stirring frequently, until vegetables are crisp tender. Add corn, milk, pepper and thyme. Reduce heat to medium and cook for about 15 minutes until vegetables are tender, stirring frequently.
Add cheese and peas; cook and stir about 5-7 minutes until cheese is melted and peas are hot and tender. Do not boil. Serves 6
