Low Sodium Soup Mix

You can find low sodium chicken bouillon in the soup section of most large grocery stores. This is a great mix to have on hand, because you can substitute the recipe described below for a can of condensed cream soup.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 cups instant non fat dry milk powder
  • 1 cup cornstarch
  • 1/4 cup instant low sodium chicken bouillon granules
  • 2 Tbsp. dried onion flakes
  • 1/2 tsp. pepper

Preparation:

Combine all ingredients and store in airtight container.

To substitute for one can of soup, combine 1/3 cup of the mix and 1-1/4 cups cold water. Whisk well, and cook and stir over medium heat until thickened. Vegetables sauteed in a little water and then drained are wonderful added to this soup. Substitute tomato juice for the water for a tomato cream soup. Have fun experimenting!
