Crockpot Meatball Chili

Chili made with frozen fully cooked meatballs is so easy to make and very delicious.

Prep Time: 25 minutes

Cook Time: 8 hours

Ingredients:

  • 16 oz. pkg. frozen precooked Italian meatballs
  • 1 cup chopped celery
  • 14 oz. can diced tomatoes, undrained
  • 2 (15 oz). cans kidney beans, rinsed and drained
  • 8 oz. can tomato sauce
  • 6 oz. can vegetable juice cocktail
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • 1/4 teaspoon pepper
  • 2 Tbsp. cornstarch
  • 1/2 cup water

Preparation:

Place all ingredients except cornstarch and water in 4-6 quart crockpot. Cover and cook on low for 6-8 hours. If desired, you can thicken the chili by combining 2 Tbsp. cornstarch and 1/4 cup water and blending it into the chili for the last hour of cooking time. Serves 6-8
