Pumpkin Buffalo Soup is a wonderfully flavored creamy soup recipe with the flavors of Buffalo Chicken wings.

Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chopped celery
- 1 (16-ounce) can solid pack pumpkin
- 5 cups chicken broth
- 1 cup creamy blue cheese salad dressing
- 1 tablespoon cornstarch
- 1-4 teaspoons hot sauce
- 1/2 cup heavy cream
- 1/2 teaspoon celery salt
- 1/8 teaspoon cayenne pepper
- 2/3 cup crumbled blue cheese
Preparation:
In large pot, heat olive oil over medium heat. Cook onion and garlic for 6-7 mintues, stirring frequently. Add celery and pumpkin. Gradually add chicken broth; bring to a simmer.
Reduce heat and cover. Simmer for 8-14 minutes until vegetable are tender. Then add salad dressing mixed with cornstarch, hot sauce, cream, celery salt and pepper. Heat well, but do not boil. Serve soup topped with crumbled blue cheese. Serves 6
