Top this delicious soup with a bit of purchased pesto or some roasted corn kernels and Parmesan cheese. It's rich, creamy, warming, and delicious.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 8 servings

Ingredients:

  • 4 (14 oz.) cans ready to serve chicken broth
  • 2 cups frozen corn
  • 1 onion, chopped
  • 16 oz. can solid pack pumpkin
  • 1 cup half and half
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. dried thyme leaves

Preparation:

Combine broth, corn, and onion in large saucepan and bring to a boil. Reduce heat and cover. Simmer for 12-15 minutes until onion is tender. Stir in pumpkin and blend well. Cover pan and simmer 5-10 minutes. Then add half and half, salt, pepper, and thyme; stir well. Heat for 2-3 minutes until steaming.

Quick and yummy, Guest Bonnie

I love making soups, and this is one of my favorites. Even though it only has five ingredients it has a ton of flavor. And the color is so pretty. I always top it with pesto and some toasted pine nuts.
