Tomato and Cabbage Bisque

By Linda Larsen, About.com

If you can't find tomato bisque soup, you can use regular condensed tomato soup and add 2 Tbsp. cream to the finished dish.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 2 cups shredded cabbage
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 1 Tbsp. butter
  • 1/4 cup tomato sauce
  • 10 oz. can condensed tomato bisque soup
  • 3/4 cup whole milk
  • 1 cup shredded Colby cheese

Preparation:

In heavy saucepan, saute cabbage, onion and garlic in olive oil and butter until tender, stirring frequently. Add tomato sauce, condensed soup and milk, stirring well. Cook until hot. Sprinkle with cheese and serve.

If you can't find tomato bisque soup, using ordinary tomato soup along with a splash of cream will work just fine. 4 servings
