Any type of frozen tortellini or ravioli would work well in this excellent and easy Tomato Tortellini Soup recipe. Make sure you choose a frozen type, because that only needs to thaw and heat, not cook in the soup. It's perfect for lunch boxes or a quick dinner.

Ingredients:
- 2 (10 oz.) cans condensed tomato soup
- 9 oz. pkg. refrigerated cheese tortellini
- 1 cup frozen peas
- 1/2 cup grated Parmesan or Cheddar cheese
Preparation:
Dilute soup as directed on can. Heat over medium heat until the soup boils, stirring frequently. Add tortellini and peas and bring back to a simmer; cook 3 more minutes until the tortellini floats to the surface of the soup and is tender.
Pour Tomato Tortellini Soup into thermoses and package cheese separately to sprinkle over soup before eating. Or serve immediately, with crackers or toasted garlic bread. 4 servings
