Impossible Four Cheese Pie

This hearty vegetarian main dish pie using baking mix, eggs, and lots of cheeses to form a pie-like entree.

Prep Time: 20 minutes

Cook Time: 40 minutes

Ingredients:

  • 1 Tbsp. olive oil
  • 1 green bell pepper, chopped
  • 1/2 cup chopped onion
  • 2 cloves garilc, minced
  • 1 cup shredded Muenster cheese
  • 3/4 cup shredded Colby cheese
  • 1 cup small curd cottage cheese
  • 1-1/2 cups milk
  • 4 eggs
  • 1 cup baking mix
  • 1/2 cup shredded Colby cheese
  • 2 Tbsp. grated Parmesan cheese

Preparation:

Preheat oven to 400 degrees. Grease a 10" pie plate.

In small saucepan, heat olive oil over medium heat. Add green pepper, onion, and garlic; cook and stir until crisp-tender, about 5-6 minutes. Set aside.

In small bowl, mix Muenster cheese, 1/2 cup Colby cheese and cottage cheese; mix well. Add green pepper mixture and stir; and spread into pie plate.

In medium bowl, combine milk, eggs, and baking mix and stir with wire whisk until smooth. Pour over cheese mixture. Bake pie at 400 degrees for 30 minutes.

Remove from oven and sprinkle with 1/2 cup Colby cheese and Parmesan cheese. Return to oven and bake for 13-15 minutes longer or until knife inserted in center comes out clean. Cool 5 minutes before slicing. 6-8 servings
