Impossible Beef Burrito Pie

This rich and hearty impossible pie is quick, easy, and delicious. Use your own homemade baking mix to help control sodium and fat content.

INGREDIENTS:

  • 1 lb. ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp. chili powder
  • 1/2 tsp. cumin
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 cup chunky salsa
  • 1 cup crushed tortilla chips
  • 2 cups shredded Cojack or Pepper jack cheese
  • 1-1/4 cups milk
  • 3 eggs
  • 2 tsp. taco seasoning mix
  • 3/4 cup baking mix
  • 3 Tbsp. Cotija or Parmesan cheese

PREPARATION:

Preheat oven to 400 degrees F and generously grease a 10" pie pan; set aside. In heavy skillet, cook ground beef, onion, and garlic until beef is browned; drain well. Add chili powder, cumin, salt, pepper, and half of the salsa.

Sprinkle the crushed tortilla chips in prepared pie pan and top with half of the Cojack cheese. Top cheese with beef mixture.

In medium bowl combine milk, eggs, taco seasoning mix, and baking mix and stir with wire whisk until combined. Pour over beef mixture in pie pan and bake at 400 degrees F for 25-35 minutes until puffed and golden.

Spoon remaining salsa over pie and top with remaining cheese and the Cotija cheese. Return to oven and bake 8-9 minutes longer until cheese melts. Serve with shredded lettuce, sour cream, and chopped avocado. Serves 6
