Impossible Cherry Pie

This delicious easy dessert pie recipe combines cherry pie filling with a brown sugar streusel; yum.

INGREDIENTS:

  • 3/4 cup milk
  • 2 Tbsp. butter, melted
  • 1 tsp. vanilla
  • 2 eggs
  • 3/4 cup baking mix
  • 1/4 cup brown sugar
  • 21 oz. can cherry pie filling
  • 3 Tbsp. cold butter
  • 1/2 cup baking mix
  • 1/2 cup brown sugar
  • 1/2 tsp. cinnamon
  • 1/8 tsp. cardamom
  • 1/4 cup chopped almonds

PREPARATION:

Preheat oven to 400 degrees. Spray a 10" pie plate with nonstick baking spray containing flour and set aside.

In medium bowl combine milk, melted butter, vanilla, eggs, 3/4 cup baking mix and 1/4 cup brown sugar and mix well with wire whisk until smooth. Pour into prepared pie plate. Spoon pie filling evenly over top. Bake at 400 degrees for 25 minutes. Meanwhile, prepare streusel.

For streusel, in small bowl cut 3 Tbsp. cold butter into 1/2 cup baking mix, 1/2 cup brown sugar, cinnamon, and cardamom until crumbly. Stir in chopped almonds.

Top pie filling with streusel, return to oven, and bake until the streusel topping is brown, 10-13 minutes longer. Cool. Refrigerate any remaining pie. 8 servings
