Impossible Chocolate Cream Pie

This unusual impossible pie has a creamy chocolate center and is wonderful topped with ice cream. Use a homemade biscuit mix to control fat and sodium.

INGREDIENTS:

  • 1 cup chocolate milk
  • 1/4 cup butter, softened
  • 1 tsp. vanilla
  • 2 eggs
  • 5 (1 oz.) squares semisweet chocolate, melted and cooled
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup baking mix
  • 1/2 cup semisweet chocolate chips
  • 2 Tbsp. powdered sugar

PREPARATION:

Preheat oven to 350 degrees F and spray a 9" pie pan with nonstick baking spray containing flour. In blender or food processor, place all ingredients except chocolate chips and powdered sugar. Cover and blend or process for 45-60 seconds until mixture is smooth.

Pour into prepared pie pan. Sprinkle with chocolate chips. Bake at 350 degrees F for 25-30 minutes until pie springs back when lightly touched in center. Cool completely before slicing. Sprinkle with powdered sugar and top with strawberry or raspberry sorbet and chocolate sauce to serve. Serves 8
