Impossible Ham Asparagus Pie

This quick and easy main dish pie makes its own crust as it bakes. This is a perfect recipe for using leftover ham. Make your own homemade baking mix to help control fat and sodium.

Prep Time: 15 minutes

Cook Time: 35 minutes

Ingredients:

  • 10-oz. pkg. frozen asparagus pieces, thawed and drained
  • 1-1/2 cups cubed cooked ham
  • 1/4 cup chopped green onions
  • 1 cup cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup sour cream
  • 1/4 cup melted butter
  • 2 eggs
  • 1/2 cup baking mix
  • 1/4 cup grated Parmesan cheese

Preparation:

Preheat oven to 350 degrees F and spray a 10" pie pan with nonstick baking spray containing flour; set aside. Make sure asparagus is well drained. Place in prepared pie pan along with ham and green onions. [p[]In medium bowl, combine cottage cheese, 1/4 cup Parmesan cheese, sour cream, melted butter, eggs, and baking mix and beat until smooth. Pour over ham and asparagus in pie plate. Sprinkle with remaining Parmesan cheese. Bake at 350 degrees F for 30-35 minutes until puffed and golden brown. Serves 6
