Ingredients:
- 3/4 cup cottage cheese
- 1/3 cup grated Parmesan cheese
- 1-1/3 cups cooked cubed chicken
- 1 (4 oz.) can sliced mushrooms, well drained
- 1-1/3 cups shredded mozzarella cheese, divided
- 1 tsp. dried Italian seasoning
- 1 (6 oz.) can Italian flavored tomato paste
- 1-1/4 cups milk
- 2 eggs
- 2/3 cup baking mix
- 1/4 tsp. pepper
Preparation:
Preheat oven to 400 degrees. Spray a 10" pie pan with nonstick baking spray containing flour, and layer cottage cheese and Parmesan cheese in bottom of pan. In small bowl, combine chicken, drained mushrooms, 1/2 cup mozzarella cheese, Italian seasoning, and tomato paste. Spoon this mixture over Parmesan cheese.In medium bowl, combine milk, eggs, baking mix and pepper and beat with wire whisk until smooth. Pour into pie pan. Bake at 400 degrees for 25-30 minutes until golden brown. Sprinkle with remaining mozzarella cheese and bake 5-10 minutes longer until pie is set and cheese is melted and beginning to brown. Cool 5 minutes before slicing. Serves 6-8
