Ingredients:
- 3/4 cup cottage cheese
- 1/3 cup grated Parmesan cheese
- 1-1/3 cups cooked cubed chicken
- 1 (4 oz.) can sliced mushrooms, well drained
- 1-1/3 cups shredded mozzarella cheese, divided
- 1 tsp. dried Italian seasoning
- 1 (6 oz.) can Italian flavored tomato paste
- 1-1/4 cups milk
- 2 eggs
- 2/3 cup baking mix
- 1/4 tsp. pepper
Preparation:
In medium bowl, combine milk, eggs, baking mix and pepper and beat with wire whisk until smooth. Pour into pie pan. Bake at 400 degrees for 25-30 minutes until golden brown. Sprinkle with remaining mozzarella cheese and bake 5-10 minutes longer until pie is set and cheese is melted and beginning to brown. Cool 5 minutes before slicing. Serves 6-8
