Impossible Cheesy Mac Pie

The macaroni finishes cooking as the pie bakes; your kids will love this easy recipe. USe your own homemade baking mix to control sodium and fat.

Prep Time: 15 minutes

Cook Time: 40 minutes

Ingredients:

  • 1 cup uncooked macaroni pasta
  • 1/2 cup cubed American cheese
  • 1 cup shredded sharp Cheddar cheese
  • 1-1/2 cups shredded colby cheese
  • 1/3 cup sliced green onions
  • 2 cups milk
  • 1/8 teaspoon hot pepper sauce
  • 4 eggs
  • 3/4 cup baking mix
  • 1/2 tsp. dried basil leaves
  • 1/2 cup frozen baby peas, thawed
  • 1/4 cup grated Parmesan cheese

Preparation:

Preheat oven to 400 degrees F. Grease 10" pie pan with solid shortening; sprinkle with flour and set aside.

Bring a medium pot of water to a boil. Cook the macaroni half of the recommended cooking time, drain well and rinse with cold water; drain well again.

In medium bowl, combine cooled macaroni, American cheese, Cheddar cheese, colby cheese and uncooked macaroni.

In large bowl, combine remaining ingredients except peas and Parmesan cheese and mix well until combined. Stir in macaroni mixture and peas.

Pour into pie pan, making sure that macaroni is below the surface of the batter. Sprinkle with Parmesan cheese and bake at 400 degrees F for 35-40 minutes until pie is puffed and macaroni is tender when pierced with a fork. Serves 6
