Impossible Pumpkin Pie

For Thanksgiving or a fall family dinner, this pie can't be beat! Use Homemade Baking Mix to control fat and sodium content.

Prep Time: 15 minutes

Cook Time: 55 minutes

Ingredients:

  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 3/4 cup baking mix
  • 12 oz. can evaporated milk
  • 2 eggs
  • 16 oz. can solid pack pumpkin (not pie filling)
  • 1/2 tsp. nutmeg
  • 2 tsp. vanilla
  • 1 tsp. cinnamon
  • 1/8 tsp. ground cloves
  • 1/4 tsp. ground ginger
  • 2 Tbsp. butter, melted

Preparation:

Preheat oven to 350 degrees. Grease a 9" pie plate and set aside. Combine all ingredients in blender, food processor, or a large bowl. Cover and blend or process on high for 1 minute, or beat with wire whisk for 2 minutes, until mixture is smooth.

Pour into prepared pie plate and bake at 350 degrees for 50-55 minutes, until a knife inserted in center comes out clean. Let cool before slicing. Serve with whipped cream or ice cream. 8 servings
