Roasted Red Pepper Impossible Pie

Silky and smoky roasted red peppers are the highlight of this easy impossible entree pie. You can purchase bottled roasted peppers, or make your own. You can also use your own homemade baking mix to help control fat and sodium.

Prep Time: 15 minutes

Cook Time: 35 minutes

Ingredients:

  • 12 slices bacon
  • 1/4 cup chopped green onions
  • 1/2 cup chopped roasted red bell peppers
  • 1/2 cup feta cheese
  • 1 cup milk
  • 3/4 cup baking mix
  • 3 eggs, beaten
  • 1/2 tsp. dried thyme leaves

Preparation:

Cook bacon until crisp; drain on paper towels and crumble. Preheat oven to 400 degrees F and grease a 9" pie plate. Place cooked bacon, onions, and peppers in pie plate and sprinkle with cheese.

Combine remaining ingredients in medium bowl and stir with wire whisk until blended. Pour over cheese in pie plate. Bake at 400 degrees F for 30-35 minutes until set and puffed. 4-6 servings
