Shrimp and Gruyere Impossible Pie

Frozen cooked shrimp and Gruyere cheese make this quick and easy impossible pie recipe so delicious and elegant. The baking mix mixture doesn't form a flaky crust; it just holds the shrimp, peas, and cheese together so it will cut and serve like a pie.

Prep Time: 15 minutes

Cook Time: 35 minutes

Ingredients:

  • 6-oz. pkg small frozen cooked shrimp, thawed
  • 1/4 cup sliced green onions
  • 1 tsp. dried thyme leaves
  • 1 cup frozen baby peas, thawed and drained
  • 1-1/4 cups shredded Gruyere cheese
  • 1-1/2 cups milk
  • 3 eggs
  • 3/4 cup baking mix
  • 1/8 tsp. pepper
  • 1/4 cup grated Parmesan cheese

Preparation:

Preheat oven to 400 degrees F and generously grease a 10" pie plate; set aside. Make sure thawed shrimp and peas are thoroughly drained. Place shrimp, peas, onions, and Gruyere cheese in prepared pie pan. Sprinkle with basil.

In medium bowl, combine milk, eggs, baking mix, and pepper and mix until blended. Pour into the well-greased pie plate; sprinkle with Parmesan cheese. Bake at 400 degrees F until puffed, golden brown and set, 30-35 minutes. Serves 6
