Ingredients:
- 1 pound ground pork sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 jalapeno pepper, minced
- 1 envelope or 2 tablespoons taco seasoning mix
- 4 oz. can chopped green chilies, drained
- 1 avocado, peeled and chopped
- 1 cup shredded Monterey Jack cheese
- 1-1/4 cups milk
- 3 eggs
- 3/4 cup baking mix
- 2 teaspoons chili powder
- 3 tablespoons grated Cotija or Parmesan cheese
Preparation:
Preheat oven to 400 degrees. Grease a 10" pie plate and set aside. In large skillet, cook ground beef, onion, garlic, and jalapeno pepper until beef is brown. Drain well and stir in seasoning mix. Pour into pie plate and sprinkle with chilies, avocado, and Monterey Jack cheese.In medium bowl, combine milk, eggs, baking mix, and chili powder and beat with a wire whisk until smooth. Pour into pie plate. Sprinkle with Cotija cheese.
Bake at 400 degrees for 30-35 minutes until set and golden brown. Cool 5 minutes before slicing. If desired, top with more shredded cheese, sour cream, and taco sauce. 6-8 servings
