Impossible Taco Pie

Flavors of tacos make in an easy to make and easy to serve main dish pie. Use Homemade Taco Seasoning Mix and Homemade Baking Mix if you'd like.

Prep Time: 20 minutes

Cook Time: 35 minutes

Ingredients:

  • 1 avocado, peeled and sliced
  • 1 lb. ground beef
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 green bell pepper, chopped
  • 1 envelope or 2 Tbsp. taco seasoning mix
  • 4 oz. can chopped green chilies, drained
  • 1-1/4 cups shredded PepperJack cheese
  • 1-1/4 cups whole milk
  • 3 eggs
  • 3/4 cup baking mix
  • 1/4 cup grated Cotija or Parmesan cheese

Preparation:

Preheat oven to 400 degrees. Grease a 10" pie plate. Arrange avocado slices in pie plate and set aside. In large skillet, cook ground beef, onion, garlic, and green bell pepper until beef is brown. Drain well and stir in seasoning mix. Spoon over avocados in pie plate and sprinkle with chilies and cheese.

In medium bowl, combine milk, eggs, and baking mix and beat with a wire whisk until smooth. Pour into pie plate and sprinkle with Cotija cheese. Bake at 400 degrees for 30-35 minutes until set and golden brown. Cool 5 minutes before slicing. If desired, top with more shredded cheese, sliced avocados, sour cream, and taco sauce. 6-8 servings
