Tex Mex Impossible Pie

You could add 1/2 lb. cooked, crumbled ground beef to this recipe to make it perfect for non-vegetarians. Homemade baking mix is a must for your pantry.

Prep Time: 10 minutes

Cook Time: 35 minutes

Ingredients:

  • 1 onion, chopped
  • 1 Tbsp. olive oil
  • 1 cup frozen corn, thawed and drained
  • 15-oz. can black beans, rinsed and drained
  • 3/4 cup shredded Cojack cheese
  • 1 jalapeno pepper, seeded and minced
  • 1/2 cup baking mix
  • 1/2 cup milk
  • 1/2 cup salsa
  • 2 eggs, beaten

Preparation:

Preheat oven to 400 degrees F and grease a 9" pie pan; set aside. In heavy skillet, cook onion in olive oil until tender. Place onion in prepared pie pan along with corn, black beans, cheese, and jalapenos.

In medium bowl, combine remaining ingredients and stir until blended. Pour into pie plate and bake at 400 degrees F for 35-40 minutes until pie is puffed, golden brown, and firm. Serve with sour cream, chopped avocados, and more salsa. Serves 4-6
