In the 1970s, my father started his own business. Times were tight, and my mother managed to feed us very well by shopping carefully and cooking everything from scratch. This potato soup was one of our staples. It's rich and delicious and a real bargain.

Serve it with some super simple scones hot from the oven, and a green salad made from an actual head of lettuce, not those expensive bagged salads. This menu is hearty and warming. And you can feed eight people for under ten dollars!
