It's time to return to Got $10? Make a Meal!. While the economy is improving, we still need to watch our pennies and dollars. But that doesn't mean you can't feed your family well. Using leftovers, summer produce, and a bit of kitchen wizardry makes this salad fabulous and inexpensive. You could substitute leftover cooked chicken or pork for the salmon if you'd like. But remember, you should be eating salmon or other fatty fish twice a week for best health.

You can cut this salad recipe in half to serve four people, or make the whole thing and have lunch for another day. That's another thing I love about main dish salads; they will last in the fridge for several days, and you always have something delicious to eat!
