Lamb Shank Packets

If the lamb shanks in your grocer's butcher section aren't already cracked, ask the butcher to do it. The butch will make two vertical cuts 3/4 of the way through the shanks so they don't curl up tightly as they cook.

Prep Time: 15 minutes

Cook Time: 2 hours, 30 minutes

Ingredients:

  • 4 lamb shanks, cracked
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 onion, chopped
  • 8 oz. cremini mushrooms, washed and trimmed
  • 16 oz. pkg. baby carrots
  • 1/2 cup red wine or beef broth

Preparation:

Tear off four large squares of heavy duty foil. Place each lamb shank on each square. Sprinkle with salt and pepper and top with onions, mushrooms, and carrots. Sprinkle red wine or beef broth over all and fold packet with double seal. Bake at 325 degrees for 2-1/2 hours until shanks are very tender. Serves 4
