If the lamb shanks in your grocer's butcher section aren't already cracked, ask the butcher to do it. The butch will make two vertical cuts 3/4 of the way through the shanks so they don't curl up tightly as they cook.

- 1 onion, chopped
- 8 oz. cremini mushrooms, washed and trimmed
- 16 oz. pkg. baby carrots
- 1/2 cup red wine or beef broth
