Sweet and Sour Barbecued Lamb

Treat your leftover roast lamb to this fabulous flavorful and super easy recipe.

Prep Time: 15 minutes

Cook Time: 25 minutes

Ingredients:

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp. butter
  • 2 Tbsp. olive oil
  • 1 cup barbecue sauce
  • 1/3 cup pineapple juice
  • 3 Tbsp. sugar
  • 2 Tbsp. apple cider vinegar
  • 1/2 tsp. salt
  • 1/8 tsp. white pepper
  • 1/4 cup drained crushed pineapple
  • 3 cups cubed cooked lamb

Preparation:

In large heavy skillet, cook onion and garlic in butter and olive oil over medium heat until crisp tender, about 3-4 minutes. Add remaining ingredients except pineapple and lamb; bring to a simmer. Simmer for 15-20 minutes, stirring occasionally. Then add pineapple and lamb; cook for 10-15 minutes longer until lamb is thoroughly heated. Serve over hot cooked rice. Serves 4-6
