It's important to have a collection of last minute recipes. Keep ingredients for these recipes on hand and you'll never be caught without a fallback lunch or dinner. No more ordering pizza or running out to the expensive drive-through window when everybody's hungry! Not only is this a wonderful way to turn dinner into a family occasion, you'll save money and make your family healthier by feeding them homemade meals. These last minute pork recipes are delicious and simple.

Pork will last 3 to 4 days in the refrigerator. I've been buying the 'Always Tender' cut of pork tenderloin and roasts. These are packaged so they will keep in your fridge for a week or two, making them ideal to keep on hand. Always follow 'use by' and 'best if used by' dates on any perishable food. There are also tips on how to safely refreeze pork.

If you have a favorite pork recipe that marinates for hours in the fridge, you can make it without marinating. Just mix the marinade, add the pork, and let it stand at room temperature for 10 to 15 minutes. Don't forget about the pork, and don't let it marinate longer than that. Just go ahead with the recipe.

Since pork only has to be cooked to 140 degrees F to be safe, medium pork that is slightly pink on the inside is perfect. This keeps the meat juicier and more tender. I like to cook pork to 150 or 155 degrees F just to be absolutely sure it's done.
