excellent leftover revamp!, Guest linda h

I made an eye roast a few nights back and wanted something besides sandwiches for dinner. This recipe was perfect and surprised even the picky eaters in my house. Easy to prepare. Prep-time much shorter than stated...maybe 1/2 the time! I served it with egg rolls (from the freezer). Dinner in under 30 minutes.
