Corned Beef Scramble is simply a dressed-up version of scrambled eggs.

Ingredients:
- 3 tablespoons butter
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup sliced mushrooms
- 1 cup refrigerated hash brown potatoes, drained
- 1 cup cubed cooked corned beef
- 8 eggs
- 1/4 cup light cream
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup shredded Cheddar cheese
Preparation:
In large skillet, melt butter over medium heat. Add onion and garlic; cook and stir for 3 minutes. Then add mushrooms and potatoes; cook and stir until tender, about 5-6 minutes. Add corned beef and cook 2 minutes.
Meanwhile, beat eggs with cream, salt, and pepper in medium bowl. Add all at once to the corned beef mixture. Cook over medium heat, stirring occasionally, until eggs are set but still soft and shiny. Sprinkle with cheese.
Remove from heat, cover, and let stand 3 minutes, then stir again and serve. Serves 4
