By Linda Larsen, About.com

This refreshing salad recipe can be made with deli roast beef slices or leftover roast beef. You can make this salad ahead of time - just leave out the spinach and add it to the salad and gently toss when you're ready to serve.

Prep Time: 25 minutes

Cook Time: 10 minutes

Ingredients:

  • 8 oz. bow tie pasta
  • 2 medium grapefruits
  • 1 lb. cooked thinly sliced deli roast beef, cut into strips
  • 3 cups baby spinach leaves
  • 1 cup sliced celery
  • 1/3 cup oil
  • 1/3 cup grapefruit juice
  • 1/3 cup chopped green onions
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 cup toasted pine nuts

Preparation:

Cook pasta as directed on package and drain. Meanwhile, cut one grapefruit in half and squeeze 1/3 cup juice for the dressing; set aside.
