Crunchy Ham Salad

This delicious main dish salad is very easy to prepare and fancy enough for company. Plus, it must be made ahead to chill in the fridge, so it's perfect for hot summer days.

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 cups radiatore pasta
  • 2 cups cooked cubed ham
  • 1/2 cup diced red onion
  • 1 cup sliced celery
  • 8 oz. can pineapple tidbits, drained
  • 1/2 cup tarragon vinegar
  • 1/3 cup oil
  • 2 Tbsp. honey
  • 1/2 tsp. celery seed
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 1/8 tsp. pepper

Preparation:

Cook pasta according to package directions and drain well. Meanwhile, combine ham, red onion, celery and drained pineapple in large bowl. In small bowl, combine vinegar, oil, honey, celery seed, salt, dry mustard, and pepper and blend with whisk. Pour over ham mixture. Add cooked and drained pasta and toss well to coat. Chill 2-3 hours before serving. 4-6 servings
