Steak and Antipasto Salad

Deli marinated vegetable salad, or any leftover marinated salad, works well in this easy main dish recipe.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 lb. beef top round steak
  • 1 Tbsp. olive oil
  • 1/2 tsp. garlic salt
  • dash pepper
  • 1/2 tsp. dried basil leaves
  • 7 oz. jar roasted red peppers, drained and sliced
  • 3 cups deli marinated vegetable salad
  • 10 oz. pkg. mixed salad greens

Preparation:

Heat grill. Brush both sides of steak with oil and sprinkle with garlic salt, pepper, and basil. Place steak on grill and cook for 6-10 minutes or until desired doneness, turning once. Remove from heat and let stand 5 minutes. You can also broil the steak for 6-10 minutes 6" from heat until desired doneness.

Meanwhile, combine red peppers, marinated vegetable salad, and salad greens. Cut steak diagonally across grain into thin slices and add to salad mixture. Toss gently and serve. Serves 4-6
