Tarragon Steak Salad

This elegant and delicious salad is perfect to make the day after you have grilled steak for dinner. Just grill an extra steak and refrigerate it until you assemble the salad.

Prep Time: 20 minutes

Total Time: 20 minutes

Ingredients:

  • 1/2 lb. leftover steak, cut into thin strips
  • 6 cups Boston or Bibb lettuce
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled blue cheese
  • 1/2 cup red wine and oil salad dressing
  • 1 Tbsp. minced fresh tarragon leaves
  • 1/4 tsp. pepper
  • 2 avocados, peeled and sliced

Preparation:

Arrange lettuce, red onion, and steak strips on four salad plates. Crumble blue cheese over each salad.

In small mixing bowl, combine bottled dressing, tarragon, and black pepper and whisk well. Top salads with avocado, drizzle dressing over salads and serve. 4 servings
