Tex Mex Pork Salad

This delicious hot salad is perfect for entertaining. The color, flavor, and freshness of the recipe just can't be beat.

Prep Time: 20 minutes

Cook Time: 8 minutes

Total Time: 28 minutes

Ingredients:

  • 2 cups fresh baby spinach
  • 1 bunch green onions, sliced
  • 1 pint grape tomatoes
  • 2 cups frozen corn, thawed and drained
  • 2 tsp. chili powder
  • 1/4 tsp. garlic salt
  • 1/4 tsp. cumin
  • 1/8 tsp. white pepper
  • 1 lb. pork tenderloin
  • 2 Tbsp. olive oil
  • 1/2 cup orange juice
  • 2 Tbsp. lemon juice

Preparation:

Combine spinach, onions, tomatoes and corn in serving bowl and set aside.

Combine chili powder, garlic powder and cumin in medium bowl. Cut pork into 1" pieces and toss with spice mixture.

Heat olive oil in large skillet over medium high heat; add pork. Cook and stir pork until thoroughly cooked, then add orange juice and lemon juice. Bring to a simmer and spoon pork mixture over vegetables in serving bowl. Toss to coat and serve. 4 servings
