Ingredients:
- 2 cups fresh baby spinach
- 1 bunch green onions, sliced
- 1 pint grape tomatoes
- 2 cups frozen corn, thawed and drained
- 2 tsp. chili powder
- 1/4 tsp. garlic salt
- 1/4 tsp. cumin
- 1/8 tsp. white pepper
- 1 lb. pork tenderloin
- 2 Tbsp. olive oil
- 1/2 cup orange juice
- 2 Tbsp. lemon juice
Preparation:
Combine chili powder, garlic powder and cumin in medium bowl. Cut pork into 1" pieces and toss with spice mixture.
Heat olive oil in large skillet over medium high heat; add pork. Cook and stir pork until thoroughly cooked, then add orange juice and lemon juice. Bring to a simmer and spoon pork mixture over vegetables in serving bowl. Toss to coat and serve. 4 servings
