Wilted Spinach Salad

This classic salad recipe is so easy to make for a wonderful fall or winter dinner.

INGREDIENTS:

  • 10-oz. pkg. baby spinach leaves
  • 5 slices bacon, chopped
  • 1 Tbsp. extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. sugar
  • 1 Tbsp. balsamic vinegar
  • 3 hard cooked eggs, chopped

PREPARATION:

Place spinach in a large bowl and set aside.

In a small frying pan over medium heat, cook bacon 6-9 minutes or until crisp; transfer with slotted spoon to paper towel to drain, leaving fat in pan. Return frying pan to medium heat. Add oil, garlic, salt, pepper, and sugar. Cook 2 to 3 minutes, stirring occasionally, until garlic is softened. Add balsamic vinegar and whisk to blend.

Pour warm dressing over spinach and toss gentley to wilt. Sprinkle bacon and hard cooked eggs over spinach and serve immediately. 4 servings
